Vegetarian steak with kale and roast sweet potato and carrot (vegan with no gravy)

Missing the pub food you eat with the cold and rain outside! Bring yourself a special treat with this gorgeous healthy delight! It’s quick and simple, you could make these for your special date night at home with friends or a loved one.

Prep time 5 minutes.

Cooking 25 minutes.

1 pack vegan steaks, 200g kale, 1 carrpt, 200g sweet potato, 24g bisto granules low salt, 1/2 teaspoon each of garlic powder and dried thyme and salt and pepper to taste. Serves 2

METHOD - Dice the sweet potato and carrot and place on a baking sheet in the oven covered with garlic, thyme, salt and pepper. Heat a frying pan with a cup of water and steam the kale for 6 minutes or until cooked and leave to one side. Using the same pan drain away water and fry the vegan steaks. 3 minutes before ready add kale to oven to reheat

308 calories per portion. 20.1g protein and high in vitamin A and C, calcium and Iron. Low calories and packed with vitamins and minerals •

Bake at 180c fan for 25 minutes following method or until cooked. Follow pack instructions for steak

We scored this 8/10! Could add a tablespoon of Honey on the roast veg as needs a sweet balance. Had to add gravy as from the north otherwise completely vegan. 😋
