Vegan meatballs and cauliflower mash

Missing the comfort food you eat in winter with the rain clouds outside! Bring the heart warming feeling to your plate with this gorgeous healthy delight! It’s quick and simple, you could make these in advance and keep in the refrigerator for meals in the week.

Prep time 5 minutes.

Cooking 25 minutes.

1 pack vegan shroomballs, 2 Sainsbury vegan burgers, 1 white onion, 300g tomato pasata, 1 cauliflower, 1carrpt, 1/2 teaspoon garlic powder, 1/2 teaspoon oregano and salt and pepper to taste

METHOD - heat a frying pan with a tablespoon of low fat oil. Make the burgers into 8 meatballs and add to the pan with the vegan shroomballs and onions and fry for 2 minutes until browned. Add the tomato, oregano an garlic and cover and reduce to lowest heat. Add cauliflower and carrot to a pan of boiling salted water. Once cooked mash and serve 4

373 calories per portion. 19.9g protein and high in vitamin A and C. Low calories and warming.

Cook on the hob for 25 minutes following method or until cooked.

We scored this 9/10! Could add a sprinkle of chilli flakes for a little kick. 😋
