Sweet Chilli Chicken with roasted Plantain, Yellow Pepper and Butternut Squash



Missing the sunshine ☀️! Bring the warmth to your plate with this gorgeous healthy delight! It’s quick and simple, you could make this in advance and keep in the refrigerator for meals in the week •

Prep time 15 minutes.

Cooking 40 minutes.

Lidl sweet chilli chicken breast, 200g butternut squash, 112g plantain, 1 yellow bell pepper, 1 tablespoon coconut oil, 1/2 teaspoon each of mixed herbs, paprika, fennel seeds and salt and pepper to taste. Serves 2

METHOD - preheat oven. Peel and dice butternut squash and add mixed herbs, 1/2 tablespoon of coconut oil and fennel seeds and add to baking tray and add to oven. Peel and cube plantain and add mixed herbs, paprika and garlic with rest of coconut oil and add to tray in oven 5 minutes after butternut squash. Add chicken to oven and add sliced yellow pepper to oven

325 calories. 30.7g protein and high in vitamin C and potassium.

Bake at 180c fan for 40 minutes or until cooked.

We scored this 7/10 as was missing broccoli, will add next time! We prepared all vegetables in advance and weighed out what we needed. 😋
