Salmon Baked with Kale, Carrot and Grapefruit Salad.

Missing the gorgeous food you eat on your date nights! Bring the sunshine to your plate with this gorgeous healthy delight! It’s quick and simple, you could make these in advance and keep in the refrigerator for meals in the week.

Prep time 5 minutes.

Cooking 20 minutes.

250g salmon fillets, 1 carrot, 200g kale, 1 grapefruit, 1 tablespoon of coconut oil, 1/2 teaspoon each of garlic powder, chilli flakes and oregano and salt and pepper to taste. Serves 2

METHOD - cut carrots and add to a baking sheet with salmon on top and cover with all the seasonings and bake. Boil kale for a few minutes and drain. Peel and segment grapefruit and combine all together once salmon cooked.

325 calories per portion. 28.6g protein and great for vitamins A, C and calcium. Low calories and filling.

Bake at 200c fan for 20 minutes or until cooked.

We scored this 8/10 as needs a texture of fresh tomatoes or bell pepper! Could add pasta for a carb meal. 😋
