Needing a quick protein lunch as you prepare to be back in work! Bring the summer back to your plate with this gorgeous healthy delight! It’s quick and simple, you could make this in advance and keep in the refrigerator for meals in the week.

Prep time 10 minutes.

Cooking 20 minutes.

2 cooked chicken breasts, 4 sticks of celery, 1 green pepper, 1 tomato, 250g mushrooms, 2 garlic cloves, 4 eggs, 1 teaspoon of mixed herbs and salt and pepper to taste. Serves 4

METHOD - dice all the vegetables and add to a hot pan. Finely dice the garlic and add with herbs. Dice the chicken and add salt and pepper and take off the heat. In a baking dish beat together the eggs and add the ingredients from the pan. Bake and then portion to 4

210 calories. 21g protein and high in vitamin A and calcium. Low calories and perfect for reheating

Bake at 180c fan for 20 minutes or until cooked.

We scored this 8/10 served with lettuce leaves and coleslaw! Could add either tuna or marinated tofu to keep it interesting each week. 😋
