Cod Baked in Tomatoes, French Inspired

Missing the gorgeous food you eat on your trips abroad! Bring the Mediterranean to your plate with this gorgeous healthy delight! It’s quick and simple, you could make these in advance and keep in the refrigerator for meals in the week.

Prep time 5 minutes.

Cooking 40 minutes.

250g cod fillets, 1 tin of chopped tomatoes, 300g butternut squash, 1 courgette, 1 onion, 1 tablespoon of coconut oil, 1/2 teaspoon each of garlic powder mixed herbs and salt and pepper to taste. Serves 2

METHOD - cut all vegetable into big pieces and add to a tuperwear container with seasonings, cover, shake and put butternut squash in oven first. After 20 minutes add cod and tomatoes to squash and courgette and onion separate •

260 calories per portion. 28g protein and great for vitamins and minerals. Low calories and filling.

Bake at 200c fan for 40 minutes or until cooked.

We scored this 9/10 as super filling! Could add a slice of bread for a carb meal. 😋
