Chicken Broth Soup
Missing a nice hug on the rainy days! Bring the love to your stomach with this gorgeous healthy delight! It’s quick and simple, you could make these in advance and keep in the refrigerator for meals in the week.
Prep time 5 minutes.
Cooking 2 hours.
1 whole medium chicken, 450g frozen vegetables, 2@knorrchicken stock cubes, 1 red onion, 1 small bunch of parsley, 1 teaspoon each of garlic powder and mixed herbs and salt and pepper to taste. Serves 4 •
METHOD - place everything apart from onion and parsley in a large pan and cover with 1 litre of water or until covered and season, bring to a boil then cook low to medium heat. After 1.5 hours take chicken out and remove bones and skin and add back to broth. Dice red onion and add at this time. Finish with chopped parsley •
295 calories per portion. 30.5g protein and great for vitamins A, C, potassium and calcium. Low calories, carbs and filling.
Cook for 2 hours or until cooked.
We scored this 10/10 as been a rainy day so very heart warming! Could add pearl barley for carbs and make it into 6 portions. We also are using leftovers for dinner to make into a spiced curry 😋
