Baked garlic and lemon chicken and vegetable chips

Wanting some chips at the end of this sunshine! Bring the summer to your plate with this gorgeous healthy delight! It’s quick and simple, you could make this in advance and keep in the refrigerator and freezer for meals to cook in the week.

Prep time 10 minutes.

Cooking 30 minutes.

2 chicken breasts, 1 lemon, 4 cloves of garlic, 1 teaspoon of thyme, 1 courgette, 65g aubergine, 1 yellow bell pepper, 1/2 teaspoon each of paprika, ground garlic and oregano and salt and pepper to taste. Serves 2

METHOD - zest the lemon and chop the garlic and add on top of the chicken with thyme and salt and pepper. Cut the vegetables into 1cm chips and add paprika, garlic granules  and oregano with salt and pepper. I place in tuperwear containers and shake to mix.

323 calories. 32.9g protein and high in vitamin C and calcium, extra health boosting properties. Low calories and filling.

Bake at 180c fan for 30 minutes or until cooked. Shaking veg every 10 minutes

We scored this 10/10 served with cabbage salad condiment! Could add a sweet potato for a carb meal to make extra chipa. 😋
